This is my First Recipe in this blog. Vangibath is popular breakfast in South India & Specially in Karnataka. The Regular Vangibath is made up of Rice but this Vangi Upma is prepared differently using Rava and is medium spice added with Green Brinjals and Capsicum.
Preparation time : 15min
Serves : 4
Ingredients:
Mustard seeds 1/2 tsp
Channa Dal – 1 tsp
few curry leaves
Onions – 2 to 3 slit length wise
Green chillies – 6 finely chopped (or according to your taste)
Tomato – 2
Brinjal – 1/4 Kg
Capsicum – 1Big
Grated coconut – 1 cup
Any Vangibath Powder – 4 tbl spn
Upma Rava or sooji – 300 gms
Salt to taste
Oil
Pre preparation :
Fry suji(semolina) till it becomes crisp and keep it aside.
Method:
Heat oil and add mustard, channa daal. When mustard starts popping and channa daal turns slightly brownish, add curry leaves. Add green chillies, onion, Brinjal, capsicum and tomatoes and fry till everything becomes soft. Now add grated coconut and vangibath powder and fry for 2minutes and add water ,double the measure of rava.
Now add salt to taste. Once the water starts boiling, add rava slowly, steering continuously to avoid any lumps. Cover and cook till all water is absorbed. Mix well. Garnish with coriander leaves and grated coconut. Serve hot.
